Healthy Apple Pancakes

These pancakes are great for breakfast, dessert or a snack. You can feel good about eating it as it has lots of nutrients that will keep you full. Serve it with sugar free sauce (see the video above), Greek yogurt and some sugar free syrup.

Ingredients
  

  • 1 cup old fashioned oats (ground) or oat flour 82 g
  • 2 large eggs
  • 3 tbs egg whites 46 g
  • 1 cup sugar free vanilla yogurt (chobani) 225 g/8 oz
  • 8 oz apple (1 large) 225 g
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ lemon zest

Instructions
 

  • Prepare dry ingredients by grinding oats in a food processor. Alternatively, you can buy oat flour. Add baking powder.
  • Prepare wet ingredients. In a large bowl, crack 2 eggs and add 3 table spoons of egg whites.
  • Add sugar free vanilla yogurt, lemon zest and vanilla extract. Mix well.
  • Add dry ingredients to wet ingredients and mix until combined.
  • Grate one large apple (about 9 ounces)
  • Mix all ingredients
  • Preheat a large non stick pan on a medium high heat. Make sure the heat is not to high - the pancakes can burn quickly when the heat is too high.
  • There is no need to use any butter or oil - they won't stick to a non stick pan (unless it is scratched or burnt).
  • Apply pancake batter to a heated pan. It takes about 2 - 3 minutes per side. When you start seeing that the edges start setting and little bubbles form on top of the pancakes, they are ready to be flipped.

Notes

Note that the consistency of the pancakes is very moist. If you prefer your pancakes to be more dense and drier, use more oats than recipe requests or reduce the amount of yogurt you are using.
