- ½ ripe pineapple 600 g
- 1 medium red bell pepper 100 g
- ¼ medium red onion 30 g
- 1 lime juiced
- 1 lime zest
- 1 tbsp cilantro
- 1 serrano pepper
zest and juice one lime into large enough bowl
chop onion, bell pepper and serrano pepper very finely
peel half of the pineapple and remove the core (see video for details)
dice pineapple
add all chopped vegetables into the bowl
add salt and pepper to taste and mix
refrigerate for at least an hour before serving
