Ingredients
  

  • 3 large eggs
  • 150 g oats 1¾ cups, ground into flour
  • 140 g non-fat Greek yogurt ½ cup
  • 65 g monkfruit sweetener ⅓ cup
  • 20 g unsweetened cocoa powder ¼ cup
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 60 g 2% milk ⅓ cup
  • Pinch of salt
Optional Topping:
  • oz dark chocolate
  • 2 tbsp milk

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  2. Grind oats into a fine flour using a blender or food processor.
  3. In a large bowl, whisk eggs and monkfruit until smooth. Add vanilla and yogurt, and mix again.
  4. Sift in oat flour, cocoa powder, baking powder, baking soda, and a pinch of salt.
  5. Stir gently to combine. Batter will be thick—add milk to loosen it.
  6. Pour batter into the prepared baking dish.
  7. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool slightly before slicing.
  9. Optional: Melt chocolate with milk and drizzle over cake before serving.

Notes

  • Use certified gluten-free oats if necessary.
  • Store leftovers in the fridge for up to 4 days.
  • For a richer cake, replace monkfruit with honey (adjust calories accordingly).
