Ingredients
  

  • 3 large eggs
  • 150 g oats 1¾ cups, ground into flour
  • 140 g non-fat Greek yogurt ½ cup
  • 65 g monkfruit sweetener ⅓ cup
  • 20 g unsweetened cocoa powder ¼ cup
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 60 g 2% milk ⅓ cup
  • Pinch of salt

Optional Topping:

  • oz dark chocolate
  • 2 tbsp milk

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  • Grind oats into a fine flour using a blender or food processor.
  • In a large bowl, whisk eggs and monkfruit until smooth. Add vanilla and yogurt, and mix again.
  • Sift in oat flour, cocoa powder, baking powder, baking soda, and a pinch of salt.
  • Stir gently to combine. Batter will be thick—add milk to loosen it.
  • Pour batter into the prepared baking dish.
  • Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool slightly before slicing.
  • Optional: Melt chocolate with milk and drizzle over cake before serving.

Notes

  • Use certified gluten-free oats if necessary.
  • Store leftovers in the fridge for up to 4 days.
  • For a richer cake, replace monkfruit with honey (adjust calories accordingly).
