Ingredients
  

  • 16 oz 500 g low-fat cottage cheese
  • 3 large eggs
  • 3 oz 85 g nonfat Greek yogurt
  • 1/3 cup 60 g monk fruit sweetener (or any granulated sweetener)
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (180°C).
  2. Crack 3 eggs into a large bowl of a mixer. Add monkfruit sweetener and blend well.
  3. Blend cottage cheese in a food processor until smooth.
  4. In a large bowl, combine the blended cottage cheese, eggs, Greek yogurt, sweetener, and vanilla extract. Mix until smooth.
  5. Pour mixture into 4 small ramekins or a small baking dish.
  6. Bake for 30 minutes or until the center is just set. Optional: Bake in a water bath for smoother texture.
  7. Let cool gradually in the oven with the door slightly open to reduce deflating.
  8. Add toppings if desired.
