Pat the steak dry and season with salt and pepper.
Preheat the pan on a medium high heat. Make sure the pan is hot before you put steak in it. You should get a nice hissing sound if the pan is heated well. The key is to fry it, not boil it. If the pan is not hot enough, the meat will boil and not brown.
The cooking time per side will vary depending on how you like it cooked. I like my steaks to be cooked medium rare. It usually takes 3 to 4 minutes per side for 2 inch steak (the thinner the steak the less time it will take). But to know when it is time to flip or when the steak is ready is a skill and you will figure it out with time. Best advice I can give you is to check whether the steak browned and flip.
Season on the other side with salt and pepper. Cook for 3 - 4 minutes.
Lightly touch the steak to see if it is done. See the video (minute 8:40) Make sure to rest the meat before cutting for at least 8-10 minutes.
