Ingredients
  

For the Cake Batter:
  • 2 eggs
  • 1 tsp vanilla extract
  • cup 65g granulated sweetener (erythritol or monk fruit)
  • 1 cup 225g low-fat cottage cheese
  • ½ cup 100g non-fat Greek yogurt
  • Pinch of salt
  • 1 cup 120g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
For the Caramelized Apples:
  • 2 3 sweet apples Fuji, Gala, Golden Delicious work well
  • ½ tsp ground cinnamon or more, to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and line an 8x8-inch glass baking dish with parchment paper.
  2. In a large bowl, whisk together the eggs, vanilla extract, and sweetener.
  3. Add the cottage cheese, Greek yogurt, and a pinch of salt. Whisk again until smooth.
  4. Sift the flour, baking powder, and baking soda into the batter to prevent clumps. Stir until just combined.
  5. Pour the batter into the prepared baking dish.
Make the Caramelized Apples:
  1. Dice your apples into small cubes.
  2. In a preheated pot or pan, add the diced apples and cinnamon. Cover and cook on low heat, stirring occasionally.
  3. Allow the apples to stew until they release their juices and the liquid reduces, making them naturally sweet and glossy (15–20 minutes).
  4. Let the apples cool fully before topping the cake batter to avoid sinking.
  5. Top the batter with the cooled caramelized apples.
  6. Bake at 375°F for about 45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool slightly before slicing and serving.

Notes

  • If you prefer a smoother texture, you can blend the batter before baking to eliminate the cottage cheese curds.
  • For a finishing touch, dust with 1–2 tsp of powdered sugar (optional).
  • Don’t skip cooling the apples! Hot apples will sink into the cake.
