  • 1 large egg
  • 2 tbs melted and cooled butter 1 oz
  • 1 cup all purpose flour 120 g
  • 1 cup buttermilk 250 g
  • ¼ cup 2% milk
  • 1 tsp baking powder
  • ¼ tsp baking soda

Method
 

  1. Prepare dry ingredients
  2. In a large bowl combine egg and sugar and whisk

  3. Add cooled butter, mix
  4. Add buttermilk and milk, whisk
    add buttermilk
  5. Sift in dry ingredients

  6. Whisk just to combine. Do not over mix
