More Apples than Dough Cake

If you have a few apples and crepe ingredients you can make this apple dessert. It is easy to make - no special skills or equipment required. I would know as I have made many mistakes while preparing this recipe and every time the taste was great.

Ingredients
  

  • 2 large Eggs
  • 80 g All purpose flour 2 and ¾ oz
  • 2 tbs melted butter
  • 25 g granulated sugar about 1 ounce
  • 1 tsp baking powder
  • ½ lemon, zested and juiced
  • 100 g milk 2% about 4 ounces
  • 650 g Apples (you can use more) 3-4 Apples - 23 ounces
  • 1 tsp vanilla extract

Equipment

  • Glass Pie Dish for Baking 8-1/2 inch
  • Kitchen Aid Professional stand Mixer
  • Vegetable Slicer

Method
 

  1. Melt 2 tbs of butter
    melt the butter
  2. Grease baking dish - I am using 8 inch round glass dish
  3. Prepare apples by peeling them
    peel the apples
  4. Remove the core
    remove core
  5. Slice
    slice the apples
  6. Zest half a lemon
    zest lemon
  7. Juice half of a lemon right into the apples
    add lemon juice
Prepare the dough
  1. To a bow of electric mixer add 2 whole eggs, pinch of salt, sugar and vanilla extract
    mix eggs and sugar
  2. Mix on high speed until eggs become foamy

  3. Add lemon zest, milk and 1 tbs butter and mix
  4. Add flour in batches. Mix after each batch

Assemble all Ingredients
  1. Add apples to the dough in batches. Stir each batch and make sure all apples are well coated before adding next batch

  2. Spread the apples in layers, flattening each layer to fill all gaps

  3. Brush with remaining 1 tbs of melted butter

  4. Bake at 350F for 45-50 minutes
  5. Sprinkle with powdered sugar before serving
