Pineapple Salsa – healthy side dish
Side dishes make all meals so much more excited and delicious. Pineapple salsa is just that and way more: healthy, low calorie, sweet and spicy. It is a colorful side that will enhance many dishes, especially the ones that could potentially be not that exciting like mahi mahi, cod or tilapia type of fish. Let’s face it – these fish does not have lots of flavor. Adding this pineapple salsa on top will give your fish (or poultry) just what it needed.

Pineapple is the key for the salsa
Make sure that you use a ripe pineapple. Very sweet pineapple is very important to make a good and flavorful salsa. But sometimes you buy fruit and it turns out is not so sweet. In this case, just add some sugar, honey or whatever sweetener you prefer. If you want to keep calories low use zero calorie sweetener. I highly recommend Lakanto monfruit sweetener. It tastes just like sugar and has very similar consistency and zero calories.
You may have seen recipes that add olive oil to pineapple salsa – you can add some if you so prefer. I do not like to add extra 120 calories per one tablespoon for not much flavor added. I recommend you try this recipe and see if there is anything extra needed for your taste buds.
What to serve this salsa with?
Fish is by far best option for me to have this salsa with. Especially the fish that does not have that much flavor to begin with. Fish like cod, mahi mahi, tilapia would be a good choice. But salmon would be a great option as well with a side if rice and some vegetables. I served it with roasted asparagus and mahi mahi and it was great.
You can also use this salsa with tacos. It would serve as a great filling to your favorite taco.
Pineapple Salsa Recipe
Ingredients
- ½ ripe pineapple 600 g
- 1 medium red bell pepper 100 g
- ¼ medium red onion 30 g
- 1 lime juiced
- 1 lime zest
- 1 tbsp cilantro
- 1 serrano pepper
Instructions
- zest and juice one lime into large enough bowl
- chop onion, bell pepper and serrano pepper very finely
- peel half of the pineapple and remove the core (see video for details)
- dice pineapple
- add all chopped vegetables into the bowl
- add salt and pepper to taste and mix
- refrigerate for at least an hour before serving
