Here’s what you’ll need:

  • 2½ cups (625g) 2% milk
  • 1 (12 oz) can evaporated milk
  • 2 tbsp (20g) cornstarch
  • ⅓ cup (70g) monk fruit sweetener – adjust to taste
  • 1 tsp vanilla extract

💡 Pro Tip: Freeze the bowl you’ll store the ice cream in before you start. It prevents melting during transfer and keeps your ice cream scoop-ready.

How to Make Healthy Ice Cream at Home

Step 1: Mix & Heat the Milk

Combine the 2% milk (reserve a little), and the evaporated milk in a pot. Heat until warm (but not boiling).

Step 2: Thicken the Base

In the reserved milk, dissolve the cornstarch. Add it to the warm milk with monk fruit sweetener, vanilla, and a pinch of salt. Stir constantly until it thickens and bubbles.

Step 3: Cool the Custard

Place the pot in a large bowl filled with ice to cool the mixture quickly. Stir occasionally to prevent a skin from forming and ensure a smooth texture.

Step 4: Churn It

Pour the cooled custard into your pre-frozen ice cream maker bowl. Let it churn for about 30 minutes. The result? Creamy, dreamy ice cream.

Step 5: Add the Crunch

At the end, crush and fold in 4 Biscoff cookies. This adds just a hint of indulgence for only 150 extra calories total.

Step 6: Freeze & Serve

Transfer to your frozen bowl, freeze until firm, and scoop up your guilt-free frozen treat.
