Yogurt Biscoff Dessert with Coffee
There are lots of biscoff desserts out there and most of them are very rich and calorie dense. This recipe is a low calorie yogurt biscoff dessert that you can enjoy every day as a dessert or a snack. Greek yogurt flavored with coffee with biscoff cookie crust will make your tastes buds very happy. It is packed with protein as well so it won’t leave you hungry.
What is so special about Biscoff?
Biscoff cookies became extremely popular lately and no wonder since they are absolutely delicious. This crunchy cookie with sort of caramel cinnamon flavor has very distinct flavor that you will not find in any other cookie.
I first came across biscoff cookie on a plane where they were serving as a snack and immediately fell in love it. I found these cookies in Costco and have been buying them consistently. They are a great treat and I have been using them recently as a crumble for yogurt or sautéed apples (low calorie apple crumble). I can buy these cookies now pretty much everywhere from my local grocery store to Costco warehouse.
What will you need to make this jello yogurt biscoff dessert
- Yogurt – I am using non fat Greek yogurt in this recipe as it is the lowest in calories
- Unflavored gelatin
- Espresso coffee – you can also use instant coffee if you do not have an espresso machine
- Sugar free vanilla syrup – or any flavor syrup you like. I like Skinny Syrups brand.
- Biscoff cookies
How to make jello yogurt coffee dessert with Biscoff cookies
Empty one packet of gelatin into a small dish and add 1 oz of sugar free flavored syrup of your choice. I am using Jordan’s Skinny Syrups Vanilla, Sugar Free Flavoring Syrup.
Mix it well and leave it for 5-10 minutes for the gelatin to bloom.
Prepare espresso either by using an espresso machine to make a shot or making an instant coffee.
Add espresso to gelatin and make sure it is cooled before proceeding to the next step
Add coffee gelatin into a bowl with yogurt and mix it well. Do a taste test before dividing into cups. If you need more sweetness, add more syrup at this time
Prepare cups by lining them with one crumbled biscoff cookie. I use Granite Mortar and Pestle Set to grind the cookies.
Fill the cups with yogurt gelatin mix and tap it (see video) to even it out.
Refrigerate for at least 2 -3 hours.
Garnish with an extra biscoff cookie or crumbled it on top. You can also sprinkle cocoa powder on top.

- 300 g non fat Greek yogurt (Fage recommended) 10-11 oz
- 1 packet unflavored gelatin (7 g)
- 42 g espresso coffee 1.5 oz
- 28 g vanilla flavored sugar free syrup 1 oz
- 2 biscoff cookies plus more for either garnish or crumble on top, if you choose to have it
Instructions
