Healthy Coconut Homemade Ice Cream
Homemade ice cream is a healthy alternative to a store bought kind, even better than the lower calorie ice cream. There are only 2 main ingredients that you will need, and 2 additional for extra flavor.
It is a very easy and quick process, provided that you freeze your ice cream bowl a day ahead. I use a Cuisinart ice cream machine to make this yogurt ice cream and if you plan on making them often it is worth investing in this small appliance (less than $100).

What is the healthiest option for ice cream?
Greek yogurt is by far the best and healthiest option for ice cream because it is low in calories and very high in protein. Another good option is frozen fruit like frozen bananas or strawberries. They are good and refreshing but there is no filling protein in those.
What can I replace sugar with in ice cream?
You can replace sugar with monkfruit sweetener or sugar free syrups. My favorite is a mix of Mrs Butterworth pancake syrup and any flavor of Skinny Syrups. For this recipe I use coconut flavor skinny syrup.
How is healthy ice cream made?
24 hours before you decide to make this healthy yogurt ice cream, put an ice cream machine bowl into the freezer. I like to wrap it in a plastic bag so it doesn’t get damaged.
In a large bowl combine all ingredients: yogurt, sweetener, coconut extract and coconut flakes.
For better results, you can add coconut flakes at the end of the process, after the yogurt is already churned.
Remove the bowl from freezer. Assemble ice cream machine according to manufacturer instructions.
Turn the ice cream machine on and start pouring the yogurt mixture slowly.
Churn for 15 minutes.
Serve immediately. Make sure to transfer all ice cream into an airtight container right away. If left in the bowl, the yogurt will continue freezing.
Leftovers can be stored in a freezer. Once ready to eat, remove from the freezer ahead of time. The ice cream will freeze hard and has to be thawed for 30 minutes in a fridge before it is ready to be eaten.

- ½ cup sweetener (mix of Mrs Butterworth pancake syrup and coconut flavor skinny syrup.) ½ to 1 cup
- 2 tbsp unsweetened coconut flakes 1 oz/28 g
- 1 tsp coconut extract
Instructions
