Healthy Blueberry Breakfast Cake (Only 129 Calories!)

It looks like a cake, tastes like cake… but is it actually cake?

One thing I know for sure: you can enjoy this blueberry breakfast cake for breakfast, dessert, or even as a snack!

This easy baked oatmeal recipe is made with simple ingredients like old-fashioned oats, eggs, Greek yogurt, almond milk, and wild blueberries. The oats are ground into a fine flour, giving this healthy blueberry cake a soft, cake-like texture without needing traditional flour.

And the best part? Each serving is only about 129 calories.

It’s a delicious way to enjoy something that feels like dessert while still working beautifully as a breakfast or snack.

Why You’ll Love This Healthy Blueberry Cake

There are plenty of reasons to keep this recipe in your rotation:

  • Only about 129 calories per serving
  • Made with wholesome, simple ingredients
  • Naturally sweetened with your choice of sweetener
  • Packed with juicy blueberries
  • Greek yogurt adds moisture and protein
  • Oats give it a hearty texture
  • Easy to prepare in one bowl
  • Great for breakfast, meal prep, dessert, or a snack
  • Can be prepared ahead of time and baked the next morning

It falls somewhere between baked oatmeal, a pancake, and a cake. In fact, once it’s baked, the texture reminds me more of a delicious, fluffy pancake than a traditional cake.

And that’s exactly what makes it so good.

Ingredients You’ll Need

Old-Fashioned Oats

You’ll need 2 cups of old-fashioned oats. I like to grind the oats into a fine flour before adding them to the batter.

A blender or NutriBullet works really well for this. Because the oats can get stuck around the sides, give the container a shake occasionally while grinding.

You can also use oat flour if you already have it.

Sweetener

I use 1/3 cup of monk fruit sweetener, but you can use your preferred sweetener.

Honey is another option. Keep in mind that using honey will add calories and will also change the consistency slightly.

Eggs

You’ll need 2 large whole eggs. They help bind the ingredients together and contribute to the cake-like texture.

Non-Fat Greek Yogurt

1/2 cup of non-fat Greek yogurt adds moisture and gives the recipe a little extra protein.

Milk

I use 1/2 cup of unsweetened almond milk because it’s lower in calories than regular milk.

You can absolutely substitute 2% milk or another milk you prefer.

Vanilla Extract

A teaspoon of vanilla extract adds a little extra sweetness and makes the whole recipe smell amazing while it’s baking.

Baking Powder

You’ll need 1 teaspoon of baking powder to help the blueberry oatmeal cake rise.

Wild Blueberries

The star of the recipe!

I use 5 ounces of wild blueberries. Frozen blueberries work perfectly, so there’s no need to wait for blueberry season.

Fresh blueberries can also be used.

Walnuts

I like to add 1 ounce of chopped walnuts for extra texture and crunch.

This is completely optional. If you’re watching your calorie intake, you can leave the nuts out.

How to Make Healthy Blueberry Breakfast Cake

1. Mix the wet ingredients

Start by adding the 2 eggs to a mixing bowl.

Add the 1/3 cup sweetener, followed by the vanilla extract and Greek yogurt.

Mix everything together until well combined.

2. Grind the oats

Place the old-fashioned oats into a blender or NutriBullet and grind them into a fine flour.

I recommend grinding the oats yourself if that’s what you have on hand. It’s quick, creates very little mess, and produces a nice fine texture.

Because the oats can sometimes stick together, give the blender container a shake between pulses.

3. Sift the ground oats

Add the ground oats to the wet mixture.

I like to sift the ground oats before adding them because they can contain larger clumps. Sifting helps create a smoother batter and prevents you from ending up with unexpected chunks of oats in the finished cake.

Add 1 teaspoon of baking powder and mix.

4. Add the milk

At this point, the batter will be extremely thick.

Add 1/2 cup of unsweetened almond milk and mix until you have a smooth, thick batter.

If you’re using regular milk, that’s perfectly fine too.

5. Let the batter rest

You can bake the mixture right away, but if you have time, let the batter rest for about 30 minutes to an hour.

You can even prepare it the night before and keep it in the refrigerator overnight. Then, in the morning, simply bake it for an easy breakfast.

This makes it especially convenient for meal prep.

6. Prepare the baking dish

I’m using a 9-by-9-inch baking dish.

Lightly butter the parchment paper so that it sticks to the pan. You don’t need to use a large sheet of overlapping parchment paper. A piece that fits the bottom is enough.

7. Add the blueberries and walnuts

Pour the batter into the prepared baking dish.

Sprinkle 5 ounces of blueberries over the top.

Then add about 1 ounce of chopped walnuts.

You can use walnuts, another type of nut, or skip the nuts completely.

Even though one ounce doesn’t sound like much, it adds plenty of crunch and texture throughout the cake.

8. Bake

Bake at 350°F for approximately 45–50 minutes.

Keep an eye on it toward the end of the baking time. Once the top begins to brown and the cake is set, it’s ready.

Every oven is slightly different, so use the baking time as a guideline rather than an absolute rule.

How to Remove the Cake From the Pan

Here’s a little trick that makes removing the cake much easier.

After baking, run a knife around the edges of the cake where it has stuck to the sides of the pan.

Once you’ve loosened those edges, you should be able to lift the cake out easily.

There’s no need to completely line the baking dish with a huge piece of parchment paper.

Let it cool before cutting if you’d like cleaner slices. I personally love eating it while it’s still warm!

You can also add a small dusting of powdered sugar on top if you want it to look a little more like dessert.

Can You Eat This for Breakfast?

Absolutely!

That’s one of my favorite things about this recipe.

Although it looks like a blueberry cake, the ingredients make it work just as well as a healthy baked oatmeal breakfast.

You can prepare the batter the night before, refrigerate it, and bake it in the morning.

It’s also easy to portion into 9 servings, making it a convenient option for breakfast meal prep.

Is This a Cake or Baked Oatmeal?

That’s up for debate!

The appearance definitely says cake, but the texture reminds me of a pancake.

I’d describe it as a cross between blueberry baked oatmeal and a fluffy pancake, with enough sweetness to satisfy a dessert craving.

So whether you call it a blueberry breakfast cake, baked oatmeal, or a giant blueberry pancake, the important thing is that it’s delicious.

Can I Use Almond Flour Instead of Oats?

Yes, you can.

Almond flour is an alternative if you’d prefer a different texture or want to avoid oats.

However, almond flour is more calorie-dense than oats, so the nutritional information will change.

If keeping the calories lower is important to you, I recommend sticking with the ground oats.

Can I Use Fresh Blueberries?

Definitely.

I used frozen wild blueberries because that’s what I had available, but fresh blueberries work just as well.

You don’t need to thaw frozen blueberries before using them.

Wild blueberries are especially delicious here because they’re small and flavorful, but regular blueberries are perfectly fine too.

Can I Leave Out the Walnuts?

Yes!

The walnuts are completely optional.

They add a nice crunch, but the recipe is delicious without them. If you’re trying to reduce the calories, leaving out the walnuts is an easy way to do that.

You could also substitute another type of chopped nut if you prefer.

How to Serve Blueberry Breakfast Cake

There are so many ways to enjoy this recipe.

For breakfast: Serve a warm slice alongside coffee, tea, or your favorite breakfast drink.

For dessert: Add a light dusting of powdered sugar or your favorite topping.

As a snack: Cut the cake into individual portions and grab one whenever you need something sweet.

For meal prep: Divide the finished cake into 9 portions and store them so you have an easy breakfast or snack ready to go.

And honestly, it’s hard to beat a warm slice straight from the oven.

Storage

Once cooled, store leftover blueberry breakfast cake in an airtight container in the refrigerator.

Because this recipe contains eggs and Greek yogurt, I recommend refrigerating leftovers rather than leaving them at room temperature for an extended period.

You can gently reheat individual portions when you’re ready to eat them.

Recipe Notes & Tips

Sift the oats: This step is optional, but I highly recommend it if you’re grinding your own oats. It helps eliminate larger clumps and gives the finished cake a more consistent texture.

Don’t worry about the batter being thick: The ground oats absorb a lot of liquid. That’s why the almond milk is added to loosen the mixture.

Adjust the sweetener to your taste: Different sweeteners have different levels of sweetness, so you may want to adjust the amount depending on what you use.

Frozen blueberries are fine: No need to thaw them first.

Watch the cake toward the end: Baking times can vary between ovens. When the top starts to brown and the center is set, it’s ready.

Let it cool for easier slicing: If you want neat slices, allow the cake to rest before cutting. If you’re like me and don’t mind a mess, it’s delicious while it’s still warm!
