A blender or NutriBullet works really well for this. Because the oats can get stuck around the sides, give the container a shake occasionally while grinding.
You can also use oat flour if you already have it.
Sweetener
I use 1/3 cup of monk fruit sweetener, but you can use your preferred sweetener.
Honey is another option. Keep in mind that using honey will add calories and will also change the consistency slightly.
Eggs
You’ll need 2 large whole eggs. They help bind the ingredients together and contribute to the cake-like texture.
Non-Fat Greek Yogurt
1/2 cup of non-fat Greek yogurt adds moisture and gives the recipe a little extra protein.
Milk
I use 1/2 cup of unsweetened almond milk because it’s lower in calories than regular milk.
You can absolutely substitute 2% milk or another milk you prefer.
Vanilla Extract
A teaspoon of vanilla extract adds a little extra sweetness and makes the whole recipe smell amazing while it’s baking.
Baking Powder
You’ll need 1 teaspoon of baking powder to help the blueberry oatmeal cake rise.
Wild Blueberries
The star of the recipe!
I use 5 ounces of wild blueberries. Frozen blueberries work perfectly, so there’s no need to wait for blueberry season.
Fresh blueberries can also be used.
Walnuts
I like to add 1 ounce of chopped walnuts for extra texture and crunch.
This is completely optional. If you’re watching your calorie intake, you can leave the nuts out.
How to Make Healthy Blueberry Breakfast Cake
1. Mix the wet ingredients
Start by adding the 2 eggs to a mixing bowl.
Add the 1/3 cup sweetener, followed by the vanilla extract and Greek yogurt.
Mix everything together until well combined.
2. Grind the oats
Place the old-fashioned oats into a blender or NutriBullet and grind them into a fine flour.
I recommend grinding the oats yourself if that’s what you have on hand. It’s quick, creates very little mess, and produces a nice fine texture.
Because the oats can sometimes stick together, give the blender container a shake between pulses.
3. Sift the ground oats
Add the ground oats to the wet mixture.
I like to sift the ground oats before adding them because they can contain larger clumps. Sifting helps create a smoother batter and prevents you from ending up with unexpected chunks of oats in the finished cake.
Add 1 teaspoon of baking powder and mix.
4. Add the milk
At this point, the batter will be extremely thick.
Add 1/2 cup of unsweetened almond milk and mix until you have a smooth, thick batter.
If you’re using regular milk, that’s perfectly fine too.
5. Let the batter rest
You can bake the mixture right away, but if you have time, let the batter rest for about 30 minutes to an hour.
You can even prepare it the night before and keep it in the refrigerator overnight. Then, in the morning, simply bake it for an easy breakfast.
This makes it especially convenient for meal prep.
6. Prepare the baking dish
I’m using a 9-by-9-inch baking dish.
Lightly butter the parchment paper so that it sticks to the pan. You don’t need to use a large sheet of overlapping parchment paper. A piece that fits the bottom is enough.
7. Add the blueberries and walnuts
Pour the batter into the prepared baking dish.
Sprinkle 5 ounces of blueberries over the top.
Then add about 1 ounce of chopped walnuts.
You can use walnuts, another type of nut, or skip the nuts completely.
Even though one ounce doesn’t sound like much, it adds plenty of crunch and texture throughout the cake.
8. Bake
Bake at 350°F for approximately 45–50 minutes.
Keep an eye on it toward the end of the baking time. Once the top begins to brown and the cake is set, it’s ready.
Every oven is slightly different, so use the baking time as a guideline rather than an absolute rule.

How to Remove the Cake From the Pan
Here’s a little trick that makes removing the cake much easier.
After baking, run a knife around the edges of the cake where it has stuck to the sides of the pan.
Once you’ve loosened those edges, you should be able to lift the cake out easily.
There’s no need to completely line the baking dish with a huge piece of parchment paper.
Let it cool before cutting if you’d like cleaner slices. I personally love eating it while it’s still warm!
You can also add a small dusting of powdered sugar on top if you want it to look a little more like dessert.

Can I Use Almond Flour Instead of Oats?
Yes, you can.
Almond flour is an alternative if you’d prefer a different texture or want to avoid oats.
However, almond flour is more calorie-dense than oats, so the nutritional information will change.
If keeping the calories lower is important to you, I recommend sticking with the ground oats.
Can I Use Fresh Blueberries?
Definitely.
I used frozen wild blueberries because that’s what I had available, but fresh blueberries work just as well.
You don’t need to thaw frozen blueberries before using them.
Wild blueberries are especially delicious here because they’re small and flavorful, but regular blueberries are perfectly fine too.
Can I Leave Out the Walnuts?
Yes!
The walnuts are completely optional.
They add a nice crunch, but the recipe is delicious without them. If you’re trying to reduce the calories, leaving out the walnuts is an easy way to do that.
You could also substitute another type of chopped nut if you prefer.
